Contents of Uralai Roast

For Chettinadu Spices:

  •     1 coconut, grate
  •     10 g whole red chilli
  •     15 grams coriander seeds
  •     15 g ginger
  •     15 g garlic
  •     5 g cinnamon
  •     5 g cardamom
  •     5 g cloves
  •     3 g kalpasi
  •     3 g chakra flower seeds
  •     5 g pepper corns
  •     3 g curry leaves
  •     2 g turmeric powder
  •     For Uralai Roast:
  •     1/2 kg boiled potatoes
  •     1 tsp chetinadu masala
  •     2 tbsp oil
  •     4 onions, chopped into pieces
  •     3 tomatoes, chopped into pieces
  •     1/2 tsp ginger-garlic paste
  •     3 green chillies, chopped into pieces
  •     5-6 curry leaves
  •     1/4 tsp turmeric powder
  •     2 tsp red chilli powder
  •     4 tsp coriander powder
  •    1/2 cup water
  •     coriander leaf

  • Boil and peel the potatoes.
  • To make Chettinadu Masala:
  • 1 Lightly fry coconut, whole red chilli, coriander seeds, ginger, garlic, cinnamon, cardamom, cloves, kalpasi, chakra flower seeds, pepper seeds, curry leaves and turmeric powder.
  • Now grind them and make a fine paste of the paste.

    
For Uralai Roast:

  • Now heat oil in a pan and fry the onion. Then add tomato, ginger-garlic paste, green chilli and curry leaves, turmeric powder, red chilli, coriander powder and salt.
  • Add water and cook till the paste thickens.
  • Now add boiled potatoes and chettinadu masala and cook for three to four minutes till dry. Now your urlai is ready to be roasted.
  • Garnish with green coriander and serve with hot rice and appam.


Q. Which is the best way to cook Urlai roast?
Ans- Heat oil in a pan/kadai and when the oil is shimmering add in the mustard seeds. Then add in the urad dal and the curry leaves. Let the mustard splutter. Add the onions and fry till golden brown. Toss in the green chillies and the ginger garlic paste.
