Milk is an opaque white liquid created by the milk glands of females. The newborn is dependent on milk until he is unable to consume other substances. Normally milk contains 75 percent water and the remaining part contains solid elements i.e. minerals and fats. Apart from cow and buffalo, packaged milk of various companies is also available in the market. (A) Whole milk- Milk obtained from a healthy animal which has not undergone solid changes in its composition is called whole milk. This type of milk is called cow, goat, buffalo milk. The minimum amount of fat and fatless solids in whole milk has been kept at 3.5% and 8.5% in cow and 6% and 9% in buffalo, respectively.
(B) Standard Milk- This milk, in which the quantity of fat and fat-free solids is extracted from milk, cream is kept in milk with a minimum fat of 4.5% and fat-less solids 8.5%
(C) Tond Milk- Tond milk is obtained by mixing water and suppressed milk powder in whole milk, whose fat content is 3% and the amount of fat-free solid has been fixed at 8.5%.
(D) Double bond milk- In this milk, fat remains 1.5% and fat-free solid is 9%.
(E) Reconstituted milk- When milk powder is prepared by dissolving milk powder in water, wherein 1 part milk powder and 7 to 8 parts water is added, it is called reconsolidated milk.
(F) Recombined milk- This milk which is prepared by mixing butter oil, suppress milk powder and certain quantity of water is called recombined milk. In which the amount of fat is 3% and the amount of fat-less solid is 8.5%.
(G) Filled milk- When milk fat is removed from whole milk and vegetable fat is added in its place, it is called field milk.
Milk Barfee (Chhena Barfee)👉
Ingridiants:-
- 2 liter milkful cream
- 1 lemon
- Chinese as per taste
- 2 tablespoons chopped dry fruits
- 2-3 tablespoons (roasted) melon seeds
Direction:-
- When the milk boils keep boiling in a pan, add lemon juice and while stirring the milk will burst
- Now filter the milk in a sieve and wash it with water until it is sour.
- Now put sugar and water in a pan and make 2-wire syrup, mix milk in it and whisk in it and put dry fruits in it to decorate some dry fruits.
- Put ghee in the plate and spread the paste well and cut it into the desired shape when it is normal.
- Milk barfi is ready.
- 1 cup sesame seeds
- 1/2 cup Mawa
- 1/2 cup sugar
- 1/4 cup water
- 1/2 teaspoon cardamom powder
- 1-2 tablespoons pistachio almonds
- First fry the sesame seeds on low flame for 2-3 minutes and refrigerate. When cooled, grind coarsely in a grinder.
- Now add water in the sugar and keep it warm and prepare 2 wire syrup. At the same time mix mawa and cardamom powder in it and keep stirring.
- Now add coarsely ground sesame seeds and mix and keep running until the mixture comes to a freezing consistency.
- Now remove the mixture on a greased plate and make it uniform. Sprinkle the chopped almond pistachios on top and squeeze them slightly with hands.
- After cooling, make barfi pieces by cutting with a knife. Til Mawa Barfi is ready.
Milk Barfi 👉
Ingridiant:-
- 2 cups bread crumbs
- 1 cup milk powder
- 1 cup milk
- 5 tbsp sugar
- 1 tbsp ghee
- 2 tablespoons Broken Frutti
- 1 tsp mix fruit essence
- 5,6 drops yellow color
- 1,2 drops green color
- First put ghee in a pan and fry it by adding bread crumbs. On the other hand, make a paste by dissolving milk and milk powder in a bowl and put this paste in bread order and sugar and keep stirring them till it starts to collect.
- Now divide it into two parts, put yellow color and assence in one. And in the second part, add broken broken dry fruits and green color and mix
- Now wrap the green on the aluminum file like this and keep it in the fridge for two minutes to cool down.
- And roll the yellow section with ghee of aluminium foil or spread it by hand and keep the green one inside it which was kept cool in the fridge and prepare cloves by wrapping it with the help of file paper. Now let it cool for a while
- After 10 minutes, remove it and cut it into square pieces. Now, decorate it with coconut powder or foil paper from above.
Gajar Mawa Barfi👉
- 500 grams Carrot
- 500 ml full cream milk
- 1 cup Mawa
- 1 cup or sugar as per taste
- 1 teaspoon cardamom powder
- 4-5 teaspoons finely chopped nuts (cashew nuts, almonds)
- 1 tablespoon Ghee
- Colorful balls to decorate as required
- First peel the carrots, wash, and grind them finely
- Now put some ghee in the pan and fry the grated carrots for 4 to 5 minutes
- Then add milk and cook while stirring until the milk burns and becomes thick.
- Then add sugar as per taste and cook till it thickens, add cardamom powder and finely chopped nuts and keep it cool.
- Now add mawa in the pan and fry for 2-3 minutes, and after it is cooled, add sugar powder or boor sugar.
- Now lubricate the sweet mold with ghee and place the carrot mixer in the mold and press it, then keep the mawa mixture in it, similarly make all the carrot mawa sweets.
- Then decorate with colorful balls and serve delicious carrot mawa barfi after or after dinner.
Milk Cake (sweet khoya burfee)👉
Ingridiant:-
- 5 servings
- 500 grams Khoya
- 250 grams sugar
- 1 pinch saffron
- 1/2 cup almonds
- 1 bowl of pomegranate
- 1/2 tsp cardamom powder
Direction:-
- Take a cauldron and mix well with khoya
- After this, add sugar to it and mix and continue to cook on medium flame for 5-10 minutes.
- We will see if our khoya is getting thick, then we will take it out in a bowl
- After 2 hours, when it cools down, cut it with the help of a knife.
- Now serve in serving plate with some pomegranate seeds and saffron
